Easy. Quick. Simple.
…and I think this is one of the most healthy gingerbread recipe in the World! 🙂
Will not put extra weight on your child with a special diet and will not cause your child an emotional crash by the loaded sugar and carbs what other gingerbread recipes used to have.
This recipe is: Low carb, Sugar free, Nut free, Lactose free, Gluten Free.
1 medium sized gingerbread cookie has 2 net carbs approximately.
..and only 10 minutes on-hand preparation+cutting.
This is what you need for a hectic holiday season…!
Ingredients:
2 cup of ground flaxseed ( you can use either brown or golden ground flaxseed )
2 egg
3-4 tbsp canola/olive/avocado oil
1 tsp soda bicarbonate
1 cup of sweetener ( like Erythritol or Stevia)
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp clove
Tip: you can also add some 100% pure Maple syrup for better taste
Preparation:
- Preheat oven for 380 F.
- Mix ingredients in a bowl you must get hard playdoh texture. If your dough is still sticky put some more ground flaxseed until you get a firmer playdoh texture. Optionally you can also put some brown rice flour what makes the dough more manageable but keep in mind that means some extra carbs. Half cup brown flour means plus 1.4g net carbs/each cookie approx. ( in my opinion using golden flaxseed -compared to the brown flaxseed flour- you can slightly get a bit better result with these cookies. On the photos you see the result of the result of a brown flaxseed flour).
- It is IMPORTANT to spread some coconut or gluten free flour on your cutting board than put your dough on the top.
- Put second piece of parchment paper on top of the dough and roll it out the same thickness.
- Remove the parchment paper and cut out your gingerbread shapes. Be careful when lifting them up to put them on your baking sheet! This dough can be slightly fragile.
- Bake gingerbread cookies for 12-15 minutes or until the edges are darker browned.
- Let cookies cool for 10 minutes.
