This is one of my basic side dish and coming from my big love for spinach. I have been practicing to put together different side dishes from spinach and at this moment this is my favorite..
Very easy, very yummy, perfect side dish for lot’s of meats or just itself with some cream on the top for dinner.
On hand preparation time is 10 minutes and 20 minutes baking time.
Ingredients:
16 oz. package frozen spinach – drained
1 cup almond flour
4 Tbsp butter
2 large eggs
1/2 cup grated cheese ( I make it with sharp cheddar cheese, but you can add any kind of cheese. Also grated parmesan or feta cheese makes it delicious)
1/4 tsp ground nutmeg
1 tsp Himalayan salt
1/4 tsp ground black pepper
1 tsp garlic powder
1 Tbsp onion powder
3 Tbsp heavy whipping cream
Preparation:
Preheat oven for 350F.
Mix all the ingredients.
Place the mixture in a baking sheet on baking foil or parchment paper.
Bake it for 20-30 minutes.
Take it out of the oven, let spinach cool on the baking sheet for 30 minutes.
Cut it in nice little squares when serving.
