We are originally Hungarians and one of our traditional dish called “Hortobagyi palacsinta”. It is a kind of very savory meat stuffed crepe what is very smooth and very creamy. I think it is one of the perfect invention from my country 🙂 and my children love it!
These crepes are very good and can be very versatile as can be used with different fillings also salty or sweet. These crepes are very easy to make, they are soft and have a great taste! You can just roll them up with a slice of cheese an ham and off you can go!
..Originally it is made with grain-flour but I had an idea and swap the flour with almond flour since we do not eat gluten and try to avoid carbs as much as we can. Â The result was excellent!
Ingredients for around 6 crepes:
2 eggs
one cup of almond or coconut milk
3/4 cup of almond flour ( I use blanched almond flour )
1 tbsp coconut/canola oil
a pinch of salt
(when I make sweet crepes I also put a tsp sweetener like erythritol or stevia )Â
Preparation:
1. Mix the ingredients with an electric mixer
2. Meantime heat up a non-stick saute pan with a tbsp of coconut/canola oil over the fire
3. With a dipper-soup put the mixture to the pan. Try to put a layer not more thicker than 0.1 inchÂ
4. Fry it for 6-7 minutes than carefully with a flat wooden spoon turn it over. Carefully to not break it. At this stage the crepe is very fragile
5. After another 6-7 minutes with the help of the wooden spoon slip the crepe over to a dish.
6. Cover the crepe with another dish still when is hot, so it will keep the moist.Â
When you have all the 5-6 crepes, you can put in the fillings.Â
One of my children’s favorite filling is the sour-cream with fried chicken, I also put some sour-cream and cheese on the top.Â
Delicious, quick, special and savory…you can also fill it with any kind of fruits, whipped cream, sugar free marmalade..
