So..and here is something fun and really light..these Zucchini Cheese Slices are just great option for a low carb quick dinner or for a savory snack. Very versatile and very simple, quick to make.
These can also serve as a super light pizza base!
Only 10 minutes to prepare !
Ingredients:
5 cups shredded zucchini
2 eggs
2 cups shredded cheese ( mix it with some Parmesan cheese makes it a very nice flavor )
1 tbsp ground flax seed
you can use any kind of seasoning you like, like black pepper, garlic, basil..etc.
Preparation:
Mix all the ingredients together and put into approx. 6 inch circles on parchment lined cookie sheet
Bake at 450 for 15 minutes than carefully flip and bake 450 for another 15 minutes.
It is ready!
You will get soft slices but if you want the slices to be crispy it takes more time..in this case you have to let them dry in the oven for couple of hours.
( Alternatively you can also use dehydrator or just bake it for some more hours on 200 in the oven)
