This is a very simple, quick but at the same time a very decorative dish what can stand for itself as a single dish or as a side dish.
We used to eat it for dinner, when I want to prepare something a bit special and warm for dinner.
Stony loves mushrooms so we do and the best about this recipe again is that it takes about 10-15 minutes on-hand preparation only. The baking time around 15-20 minutes.
It is quick and easy to make, it is low carb and it is properly light for a dinner..
After a busy and tired day it can be a big challenge to put something special and warm to the table for dinner to our family.
These stuffed mushrooms used to save me on these occasions. These are super easy to prepare you can put any leftovers to the stuffing and the result is a warm, savory fancy cute mushroom balls. Always a success! 🙂
What you need:
- A box of fresh mushrooms
- 2 eggs
- any meat or leftover meat, like roasted chicken, ham slices etc. ( it is optional as this recipe is perfect without any meat also!)
- half onion ( you can substitute with onion powder)
- some parsley ( you can substitute with dried parsley)
- half cup of cheese ( any kind)
- a pinch of black pepper
- a pinch of garlic powder
- half tsp of salt.
Preparation:
- Preheat oven for 370 degrees.
- Separate the cap and the stalk of the mushroom
- Put the stalks to the mixer with the onion, parsley, leftover meat and mix it for a very short time just to make everything mixed but still chunky. Put the mixture in a bowl and mix with other ingredients. Your stuffing is ready now.
- Take the skin out of the mushroom caps ( it is only needed as this opens the cup a bit more for the stuffing to fit in).
- Place mushroom cups to a baking tray lined with baking sheet. Stuff them with your stuffing.
- Put some grated cheese on the top of each.
- Put it to the oven for 370 degrees for 15 minutes or until you see the cheese is getting golden.You can find the preparation in photos below:
Separate mushroom caps from the stalk and peel the skin to open the mushroom cups for the stuffing.
Mix the stuffing ingredients gently and for short time to still remain them chunky.
Then mix it with the other ingredients.This is how your stuffing will look like.
Stuff your mushroom cups and put some grated cheese on the top.
Take it out of the oven when cheese is properly baked.
Decorate with any vegetable and serve them as a single dish or as a side dish.
