This Hungarian flaxseed apple pie is so rich and so fresh!
It is perfect for a second dish after a nice warm soup or as a dessert itself with a hot tea or coffee.
You can make it with any other fruits instead of apples…pears, cherry, strawberry, plum would be all fine with this recipe!
This recipe is low carb, sugar free, gluten free, lactose free. Very easy to make and the result is guaranteed!!!
Our family is originally from Hungary but had to leave our country in 2010 due to our son’s special condition.
The Hungarian kitchen has it’s peculiarity also and there are some very traditional and original Hungarian dishes and dessert what I can not get out of my heart.
The Hungarian Apple pie or as we call in Hungarian: “Almáspite” is one of them. My mom used to bake it very often when I was a child and we loved it!
This year one of my winter plan was to polish the low carb, sugar free version of this recipe to be able to keep and bake this traditional pie also for my children.
This version is basically made of flaxseed what is my actual big favorite when is about baking. ( I love to play with flaxseed flour as I find this material so versatile and so “moldable”. )
When I have made my first attempt I was so surprised and delighted and nearly cried when I first bite in my apple pie. All my old feelings, smells, emotions were in there again in that bite! 🙂

Ingredients:
4 eggs
1/2 cup coconut or almond milk
2,5 cup flaxseed flour ( called also flaxseed meal)
1 cup almond flour ( or you can use any other low carb flour )
2 tbsp coconut oil/or butter
1/4 cup sweetener ( erythritol/stevia/xylitol)
1 tsp baking soda
pinch of salt
For the apple filling:
8-10 apples
1 tsp cinnamon
( optionally 2 tbsp sweetener )
Tip: You can add some raisins/cranberry or allspice to the apple stuffing for make it more rich.

Method:
1. Heat oven to 380F.
2. Peel and cube up apples. Put them in a pot mix them with a tbsp cinnamon and simmer for 30 minutes in a medium heat until apple cubes are medium soft. ( Optionally you can add 2 tbsp sweetener to the apple).
3. Meantime apple is simmering,mix first the wet wet ingredients than add dry ingredients and incorporate them well. You must get a dough of a soft creamy consistency.
4. Line parchment paper to a 9″ cake or pie baking pan. Place the half part of the dough on the bottom and make it even. ( You can do it the best with wet hand or a wet spoon.) Optionally you can add some grinned walnuts or cashew nuts to this layer it give the pie a richer taste. 5. Put the already soft apple cubes on the top and make it even.
6. Finally you put the other half of the pie dough on the top of the apple cubes. Since the dough is creamy is better to spoon the dough one by one on the top and make it even at the end.
7. If you make a snowman do not forget to mark the snowman’s smile with a wet knife before you put it to the oven.
8. Put it to the oven on 380F for 35-40 minutes.
9. Take it out of the oven and put it to a rack to cool. When it is cool, decorate! It stays fresh up to 6 days in the fridge!
