Low Carb and Gluten Free Cheesy spinach puffs

I have been doing this cheesy spinach recipe for a while already..and just love it..!
Very quick to make, delicious, less than one net carb each, it looks great and easy to make a decorative dish with it..and you have a perfect low carb side dish or appetizer for 2-3 days!

Here you find the ingredients, this makes about 30 puffs
( I used to make the double quantity so I have a side dish for at least for 3 days).

Ingredients:

16 oz. package frozen spinach, drained

1 cup almond flour

4 Tbsp salted butter (melted or creamy) 

2 large eggs

1/3 cup grated parmesan cheese (optional ) 

1/2 cup other type of cheese ( it can be feta, sharp cheddar, mozzarella..or whatever ) 

1/4 tsp ground nutmeg

1 tsp salt

1/4 tsp ground black pepper

1 tsp garlic powder

1 Tbsp onion powder

3 Tbsp heavy whipping cream

Preparation:

Add all of the ingredients to a food processor or blender and puree until smooth. ( You can also just mix it with hand if you want. )
Form into 1 inch balls and place on a cookie sheet.  Bake at 350 degrees for 15 minutes.
Do not bake it too long as they might dry out!
You can keep them in airtight container for 3-4 days in the fridge. 

You can serve it with some sour cream on the top..it gives a nice creamy taste and feeling and a nice look.
It is perfect for all kind of main dishes and any kind of meat..or just chilled with some slices of ham or cheese for dinner. 
We all love it!  You can also give to your child as a grab and go snack.
