Zucchini Chocolate Muffin

Yesss, a muffin made of Zucchini! I just love it! It is extremely moist, delicious, smooth. They are low carb and have no sugar.
I have tried so many low carb chocolate muffins but they often result dry….but! his one hits my playlist!
Stony and dad were astounded by this muffins..it is easy and quick to make…

Ingredients ( for about 12-15 muffins) :

2 eggs
1 cup buttermilk
1/2 cup canola oil
2 cup sweetener ( Erythritol ) 
1 tsp. vanilla
1/2 tsp. salt
1-3/4 cup almond flour
1/2 cup cocoa
2 tsp baking powder
1 tsp. cinnamon
2 cups shredded zucchini 

Preheat oven to 350 degrees F.
Mix all the ingredients together and when is ready you can shred the  peeled zucchini in or alternatively if you have no time for shredding just put the chunky pieces of zucchini in the mixture and blend it all together with a blender.  Fill the muffin tins ( I use a silicone muffin tins but if you use the classical ones you need a muffin liners inside ) Bake 25-30 minutes.
You can serve it with any kind of fruit and/or whipped cream.
