A delicious sweet bread with cranberry flakes – only 2 g carb per servings

Only 10 minutes on-hand preparation time!
Easy..quick..and amazingly delicious!

This recipe is one of the best..very versatile and you have delicious bread for breakfast or dinner and your kids are going to love it!

Ingredients:

8 eggs
1 cup of Almond flour
1/2 cup Kerrygold butter (melted a bit)
2 tablespoon of sweetener ( I use xylitol and stevia )
1 teaspoon baking powder
1/2 teaspoon xantan gum
1/4 teaspoon salt
1 teaspoon vanilla aroma
1 teaspoon shredded lemon peel
half cup of dried berry
( cranberry flakes are the best as they are very low in calories, but you can also put raisin however be careful as raisins are high in sugar, you can also try with sugar free chocolate chips..)

Preparation:

  1. Preheat oven to 350F
  2. Add eggs to the food processor and blend them for 1 minute
  3. Add butter and blend it well again
  4. Add all other ingredients ( except the dried berries!) until well combined
  5. Add the dried berries or chocolate chips. to the mixture and mix it well with a spoon
  6. Butter a loaf pan (or put baking paper in) and pour the mixture in it
  7. Bake for 45 minutes until the top gets nice caramel brown
  8. Take it out from the oven and cool before slicing

You can serve it with savory or sweet toppings.
Our favorite is eating like sandwich  with ham and cheese, but used to eat toasted with peanut butter or  sugar free jam.
