This is an easy, basic biscuit recipe for every day and any occasion. You can prepare it in just 15 minutes and bake it in another 25 minutes.

The main ingredient in these biscuits is my absolute favorite: golden flaxseed meal. I cannot deny it—flaxseed flour has become a staple in my kitchen over the last year. Flaxseeds are highly anti-inflammatory and low in carbohydrates. They help improve digestion, promote clear skin, lower cholesterol, reduce sugar cravings, balance hormones, fight cancer, and support weight loss—and that’s just the beginning!

The nutritional benefits of flaxseeds are truly amazing. They are rich in the following nutrients: Omega-3s, Fiber, Protein, Vitamin B1, Manganese, Magnesium, Phosphorus, and Selenium. Additionally, flaxseeds contain a good amount of Vitamin B6, iron, potassium, copper, and zinc. This impressive nutritional profile makes it easy to see why flaxseed is considered one of the most nutrient-dense foods on the planet.

These cute biscuits are super simple and quick to make. They serve as a perfectly clean and healthy basic snack that you can crunch on whenever you want throughout the day.

Ingredients

  • 2 eggs
  • 1.5 cups golden flaxseed flour (alternatively, you can use the more popular brown flaxseed flour)
  • 1 cup brown rice flour
  • 1 cup gluten-free quick-cooking oats (usually found in the "Free From" section of most supermarkets)
  • 2 tbsp raw honey
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup raw coconut oil
  • 1 tsp vanilla extract
  • 1 tsp pure stevia powder (or 3 tbsp erythritol or your preferred sweetener)

For the topping:

  • Chocolate chips, nuts, raisins, apple slices, etc.

Preparation

  1. Preheat your oven to 360°F (180°C).
  2. Mix all the ingredients together until well incorporated. Your dough will have a soft, play-dough-like consistency.
  3. Place a large piece of parchment paper on your counter and put the dough in the center. Place another large piece of parchment paper on top of the dough. Using a rolling pin, roll the dough out until it is about 0.1 inches thick.
  4. Carefully transfer the parchment paper with the flattened dough onto a large baking tray. Using a wet knife (or a pizza cutter), cut the dough into small diamond (rhombus) shapes by cutting diagonal crossing lines from left to right.
  5. Add your desired decorations or toppings.
  6. Place the tray in the preheated oven and bake for 20–30 minutes, or until the biscuits turn golden brown.
  7. After removing them from the oven, leave the biscuits to cool on the baking tray. Store them in an airtight container.
