The Moon Cookie
A cloud-like, super customizable, gluten-free cookie that bakes up in minutes!
Prep time: 12 mins | Cook time: 10–15 mins | Total time: 25 mins
Servings: 8 cookies | Difficulty: Super Easy

Ingredients

  • 4 large eggs

  • Âľ cup date sugar

  • 1 splash vanilla extract (be generous!)

  • Stevia (liquid drops or powder, to your taste)

  • ½ teaspoon baking soda (bicarbonate of soda)

  • 1 tablespoon arrowroot powder

  • 3 heaping tablespoons rice flour

  • 1 tablespoon oil (coconut or mild olive oil)

  • 1 pinch of salt

  • Optional Mix-ins: Dried cranberries, sliced almonds, shredded coconut, peanut butter, chopped peanuts, or dark chocolate chips

Instructions

  1. Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.

  2. Crack the 4 eggs into a large bowl and add the Âľ cup date sugar.

  3. Beat with a hand mixer on high speed for about 10 minutes until the mixture turns into a thick, airy foam with stiff peaks.

  4. Add the vanilla extract, stevia, baking soda, arrowroot powder, rice flour, oil, and a pinch of salt.

  5. Mix gently until just combined; your batter will have a thick pancake or crĂŞpe-like consistency.

  6. Fold in your favorite mix-ins, like cranberries and almonds, or keep the batter plain to top later.

  7. Grab a large, deep spoon and scoop mounds of batter onto the baking tray, leaving plenty of space between them so they can expand.

  8. Bake for 7 to 10 minutes for a super soft cookie, 10 to 15 minutes for a classic bake, or lower the oven temperature slightly and bake for 20 to 25 minutes if you love a crunchy texture.

  9. Cool for a few minutes on the tray, then enjoy warm or cold!

Nutrition & Health Benefits

These cookies are powered by four whole eggs, which means every bite gives your kids a fantastic boost of protein to keep their energy steady all afternoon. Instead of heavy refined white sugars, we use date sugar and stevia. Date sugar is made from whole dried dates, so it keeps all the natural fiber and minerals while giving the cookies a rich, caramel-like sweetness.
