A crunchy low carb butter biscuit

The Ultimate Low-Carb & Gluten-Free Shortbread Cookies
I refused to give up hope that one day I would figure out a truly delicious, low-carb shortbread biscuit recipe. And yes, it has finally happened! These cookies are low-carb, gluten-free, and perfectly crunchy and crispy—just like the real thing.
For years, I have been searching for a good low-carb shortbread cookie recipe. Unfortunately, the recipes I tried and developed never quite turned out as expected. That unforgettable crunch and crispness that makes a good shortbread so irresistible was always missing!
Both of my boys (Stony and his daddy) absolutely love shortbread, so I had to keep experimenting. Finally, I developed a recipe that comes incredibly close to the original, and we are thrilled with the results.
Here is the recipe so you can enjoy them too:
Preparation time: 15 minutes
Baking time: 15–20 minutes
Ingredients
- 2 cups almond meal
- 1/4 cup protein powder (I used Slimquick Pure Protein from Walmart)
- 1/3 cup granulated sweetener (I used Pyure Organic Stevia Blend from Walmart)
- 1/2 tsp baking powder
- 1/3 tsp xanthan gum
- 3/4 cup melted butter (I used Kerrygold unsalted butter from Walmart)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 370°F.
- Mix all the ingredients together until well incorporated.
- Knead the mixture until you achieve a soft consistency, similar to playdough. If the dough is still dry and powdery, add a little more melted butter until it reaches the right texture.
- Line a large baking tray with parchment paper.
- You can either use cookie cutters to punch out shapes or roll the dough into balls and flatten them into 1/2-inch thick circles. For the best results, ensure your cookies are consistently 1/2-inch thick.
- Bake for 15 to 20 minutes, or until the edges begin to turn golden brown.
- VERY IMPORTANT: When you take the cookies out of the oven, they will be extremely soft. You must let them cool completely on the baking tray before attempting to move them!
