Country Cloud Apple Pie

This Country Cloud Apple Pie was born out of a sudden burst of inspiration. We often find ourselves with an abundance of apples at home, and when you have that many beautiful apples sitting on the counter, they practically beg to be baked into a delicious pie!

While you can find many wonderful apple pie recipes on our website, this particular recipe is truly special. If you are looking for a pie with a fluffy, light, and bouncy marshmallow-like consistency, this is the one for you. The best part? The dough is incredibly versatile. You can easily swap the apples for other seasonal fruits, making this a ridiculously easy and adaptable recipe for any occasion. You can even convert the batter into muffins and top them with walnuts, dark chocolate chips, or your favorite healthy additions.

Ingredients

For the Apple Filling:

  • 3 kg apples (peeled, diced, and sautéed for 20 minutes with cinnamon and a sprinkle of coconut or date sugar)

For the Dough:

  • 3 large eggs

  • 4 cups rice flour

  • ½ cup psyllium husk

  • 1 large cup kefir (350 ml)

  • 1 cup olive oil

  • ½ cup honey

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • 1 heaping teaspoon baking soda

  • 1 cup raisins

Instructions

  1. Prepare the Base: In a large mixing bowl, lightly beat the eggs together using a fork.

  2. Build the Dough: Gradually add the remaining dough ingredients (rice flour, psyllium husk, kefir, olive oil, honey, vanilla, cinnamon, and baking soda) one by one, mixing thoroughly until well combined.

  3. Fold in the Goodies: Gently fold the raisins and the pre-sautéed apples into the batter. Optional: For added texture and flavor, feel free to mix in chopped walnuts, hazelnuts, or dark chocolate chips!

  4. Bake: Pour the mixture into a medium-sized baking tray. Bake in a preheated oven at 170°C (340°F) for 50–60 minutes, or until the pie is beautifully golden and set.

Chef's Tip:

For an extra touch of magic, sprinkle a little coconut or date sugar over the top of the batter just before baking. This will give you a divine, crunchy crust that contrasts perfectly with the cloud-like fluffiness of the pie!
