Creamy cheesy spinach blocks

Savory Baked Spinach Squares

This is one of my staple side dishes, inspired by my deep love for spinach. I have been experimenting with various spinach-based recipes, and right now, this is my absolute favorite!

Very easy, incredibly delicious, and the perfect side dish for a variety of meats. You can even enjoy it on its own with a dollop of fresh cream for a light, satisfying dinner.

Prep time: 10 minutes
Bake time: 20–30 minutes

Ingredients

  • 16 oz package frozen spinach (thawed and thoroughly drained)
  • 1 cup almond flour
  • 4 Tbsp butter
  • 2 large eggs
  • ½ cup grated cheese (I love using sharp cheddar, but Parmesan or feta are also delicious options)
  • ¼ tsp ground nutmeg
  • 1 tsp Himalayan pink salt
  • ¼ tsp ground black pepper
  • 1 tsp garlic powder
  • 1 Tbsp onion powder
  • 3 Tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F.
  2. Mix the batter: In a large mixing bowl, combine all of the ingredients and mix thoroughly.
  3. Prepare the pan: Spread the mixture evenly onto a baking sheet lined with parchment paper or aluminum foil.
  4. Bake: Place in the oven and bake for 20 to 30 minutes until set.
  5. Cool and slice: Remove from the oven and let the spinach cool on the baking sheet for about 30 minutes. Once cooled, cut into neat little squares for serving.
