A delicious sweet bread with cranberry flakes - only 2 g carb per servings

This recipe is truly one of the best. It is incredibly versatile, giving you a delicious, health-conscious bread perfect for breakfast or dinner—and your kids are going to love it!
Ingredients
- 8 eggs
- 1 cup almond flour
- 1/2 cup grass-fed butter (like Kerrygold), slightly melted
- 2 tablespoons natural sweetener (such as xylitol or stevia)
- 1 teaspoon baking powder
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 teaspoon freshly grated lemon zest
- 1/2 cup dried berries (Cranberry flakes are ideal as they are very low in calories and sugar. You can also use raisins, but be mindful of their higher sugar content, or try sugar-free chocolate chips for a fun twist!)
Instructions
- Preheat your oven to 350°F (175°C).
- Add the eggs to a food processor or blender and blend for 1 minute until frothy.
- Pour in the slightly melted butter and blend well.
- Add the almond flour, sweetener, baking powder, xanthan gum, salt, vanilla extract, and lemon zest. Blend until all ingredients are well combined.
- Remove the blade or transfer the batter to a mixing bowl. Gently fold in the dried berries (or sugar-free chocolate chips) using a spoon.
- Grease a loaf pan with butter or line it with parchment paper, then pour the batter evenly into the pan.
- Bake for 45 minutes, or until the top develops a beautiful caramel-brown color.
- Remove from the oven and allow the bread to cool completely before slicing.
Serving Suggestions
You can serve this versatile bread with either savory or sweet toppings! Our favorite way to enjoy it is as a sandwich with ham and cheese. It is also fantastic toasted and topped with natural peanut butter or sugar-free jam.
