Savory Low-Carb & Gluten-Free Turkey Loaf
This delicious, low-carb, and gluten-free savory turkey loaf is incredibly easy to make and even easier to eat. It pairs perfectly with your favorite side dish or serves as a healthy, protein-packed, on-the-go snack. You can even bake it in fun shapes! With just 10 minutes of hands-on preparation and 25 minutes in the oven, it is a breeze to whip up.
I am always looking for new tastes, textures, and shapes in the kitchen. My son, Stony, often eats meat with vegetables, and I try to make his meals versatile by introducing new flavors. That is how I developed this recipe—by playfully experimenting with wholesome ingredients. It was an instant hit! My husband loves it so much that he insisted on giving it the official title: "Daddy's Favorite."
My ultimate goal is to create recipes that are easy, quick, and simple, so moms with busy schedules can effortlessly bring them to life.
Ingredients
- 1 lb ground turkey
- 1 medium leek, sliced
- 6 large eggs
- 1 cup almond flour (Bob's Red Mill is a great choice)
- ½ cup olive oil
- 1 tbsp dried onion
- 1 tsp dried garlic
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp sea salt
- A pinch of black pepper
- Optional: 1 cup cheddar cheese, shredded
Instructions
- Preheat your oven: Set your oven to 350°F (175°C).
- Sauté the leek: Heat the olive oil in a medium skillet over medium heat. Add the sliced leek and sauté until tender.
- Cook the turkey: Add the ground turkey and all the seasonings (dried onion, dried garlic, oregano, basil, salt, and black pepper) to the skillet. Cook for 10–15 minutes, stirring continuously, until the turkey is fully cooked through.
- Prepare the batter: While the turkey is cooking, use a mixer to blend the eggs, almond flour, and the optional cheddar cheese in a separate bowl.
- Combine the mixtures: Remove the skillet from the heat. Pour the egg and almond flour mixture directly into the pan with the cooked turkey. Stir thoroughly until all the ingredients are well incorporated.
- Fill the molds: Scoop the mixture into greased baking molds. You can use fun shapes, a muffin tin, or simply bake it all together in a standard baking dish.
- Bake: Place in the oven and bake for 20–30 minutes, or until the surface turns a beautiful golden brown.
- Cool and serve: Remove from the oven and carefully extract the loaves (a plastic knife works perfectly to gently loosen the edges). Transfer them to a cooling rack.
Serving Suggestions
Enjoy these savory loaves warm or cold! They are fantastic on their own, dipped in a dollop of sour cream or Greek yogurt, or served alongside a fresh salad and your favorite healthy side dishes.
