Healthy Low-Carb Marble Apple Cake
Autumn has finally arrived, bringing with it cozy, peaceful days and the most beloved time of festivities. Baking is a true blessing at this time of year. There is nothing quite like the warm, comforting aroma of apple, ginger, and cinnamon drifting from the kitchen.
I absolutely love baking with apple and cinnamon during the autumn and winter months. It makes our afternoons and weekends feel incredibly special and helps us enjoy the season even more.
This peaceful seasonal mood inspired me to create something different—a rich, decorative centerpiece for our autumn table that is still low-carb, clean, and incredibly easy to make. As much as I love baking, I don't want it to take time and energy away from my family. Ease is a top priority!
Guided by autumn inspiration, I set out to create an apple cake that was anything but boring. I wanted something exciting, unusual, fulfilling, moist, and absolutely amazing—while remaining clean, gluten-free, low-carb, and sugar-free. I am thrilled to say, I achieved exactly that!
At first glance, this recipe might seem a bit complicated, but it is actually very simple. The apparent difficulty comes from making two different batters—a chocolate and a vanilla one—to create the beautiful marble effect. All you have to do is layer these batters with diced apples and berries, decorate, and bake.
Preparation takes only about 30 minutes. This cake is low-carb, sugar-free, nut-free, dairy-free, and packed with healthy fats and protein. It is so creamy, rich, and satisfying that you simply must try it! It is perfect for any occasion—a warm family dinner, a birthday, or welcoming guests for holiday feasts. Best of all, it is a super clean, highly nutritious treat for the whole family, and it is simply delicious.
Ingredients
For the White Batter:
- 2 eggs
- 2 cups brown rice flour
- 1 cup flaxseed flour
- 4 tbsp coconut oil
- 1/2 tsp stevia powder (or 5 tbsp erythritol)
- 1/2 cup unsweetened applesauce
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup soy milk (or any dairy-free milk alternative)
For the Brown Batter:
- 2 eggs
- 1.5 cups golden flaxseed flour
- 1 cup brown rice flour
- 2 tbsp unsweetened 100% cocoa powder
- 2 tbsp brown flaxseed flour
- 4 tbsp coconut oil
- 1/2 tsp stevia powder (or 5 tbsp erythritol)
- 1/2 cup unsweetened applesauce
- 2 tbsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup soy milk (or any dairy-free milk alternative)
(Note: You can substitute the 1.5 cups of golden flaxseed flour with standard brown flaxseed flour. If you do, use only 1 cup of brown flaxseed flour and increase the brown rice flour from 1 cup to 1.5 cups.)
Add-ins & Decoration:
- 6-7 apples, diced
- 1 cup raisins, dried cranberries, and/or blueberries
- Chocolate chips (for decoration)
Instructions
- Preheat your oven to 360°F (180°C).
- Mix the ingredients for the brown batter in one bowl, and the ingredients for the white batter in a separate bowl.
- Chop the apples into small dices.
- Prepare a 9-inch cake pan by lining it with parchment paper. Lightly grease the paper with coconut oil or butter.
- Layer the batters into the cake pan. Start with a layer of brown batter, add a portion of the diced apples and berries, and then add a layer of white batter. Continue alternating layers, aiming for at least three layers of each batter.
- Decorate the top of the cake with apple slices, berries, chocolate chips, or nuts once all the batter is in the pan.
- Bake in the preheated oven for at least 1 hour, or until the center of the cake is set and no longer jiggly.
- Rest the cake by removing it from the oven and letting it cool for 30 minutes before slicing.

- Add roasted nuts to the batters for extra flavor, crunch, and nutrients.
- Serve warm with a drizzle of maple syrup or a side of applesauce. It pairs perfectly with a hot cup of tea or coffee!

Step 1: Mix the brown and white batters separately. Chop the apples and prepare your cake pan.

Step 2: Layer the brown and white batters in the pan, adding diced apples and berries between each layer. Decorate the top once all batter is used.
