5-Minute Keto Banana Bread Bowl

I absolutely love this recipe! It only takes five minutes to prepare, requires just half a banana, some coconut flour, sour cream, and your favorite fruits and nuts. It is delicious, nutritious, and healthy—and your child will simply adore it!

Before switching to a ketogenic lifestyle, my son Stony used to eat my gluten-free porridge with fruits and nuts. He loved it! When we transitioned to a keto diet at the beginning of 2016, traditional porridge was no longer an option. I had to eliminate it from his meals and eagerly searched for a healthy substitute.

When I found this banana bread concept, I knew it was the perfect fit. After baking the banana bread, I cut it into cubes, mix it with fresh fruits and nuts, and top it with sweetened sour cream. This adds the perfect amount of moisture, as coconut flour can sometimes be a bit dry.

The best part of this recipe is that it is ideal for busy mornings or tired afternoons when you need to whip up something healthy and quick that your child will actually enjoy. The entire dish is ready in under 10 minutes! The hands-on prep takes just 5 minutes, baking takes 3.5 minutes (in the microwave), and the final touches take about 1.5 minutes. It is delicious, rich, and incredibly healthy!

Ingredients

For the Dough:

  • ½ ripe banana
  • 1 large egg
  • 2 tbsp coconut flour
  • ¼ tsp cinnamon
  • ¼ tsp baking powder
  • 2 tbsp coconut milk or almond milk

For the Topping:

  • ½ cup sour cream (mixed with ¼ cup water and ½ tsp keto-friendly sweetener, like erythritol)
  • Your choice of nuts and seeds (cashews, pumpkin seeds, sunflower seeds, etc.)
  • Your choice of fresh fruit (apples, blueberries, strawberries, grapes, or mango)

Instructions

  1. Mix the Dough: Combine all the dough ingredients in a small, microwave-safe mug or cup. Blend well until smooth.
  2. Bake: Microwave on high for 3 to 3.5 minutes until cooked through.
  3. Assemble: Remove the bread from the mug and cut it into bite-sized cubes. Place the cubes into a serving bowl.
  4. Decorate: Add your chopped fruits and nuts to the bowl. Toss gently to combine, then drizzle the sweetened sour cream mixture over the top.

Pro Tips for the Perfect Bowl

  • Extra Flavor: Drizzle some melted coconut oil, sugar-free maple syrup, or sugar-free chocolate syrup on top.
  • More Coconut: Sprinkle with unsweetened shredded coconut for an extra coconutty crunch!
  • Bake the Fruit: Try folding some berries or chopped fruit directly into the dough before microwaving. It makes the bread incredibly moist and colorful!

Now, all you need to do is cut the dough into cubes, mix it with your fresh fruits and nuts, and pour the sweetened cream over the top.
