Low Carb Flax Seed Bread

The Ultimate Low-Carb & Gluten-Free Flaxseed Bread
For three years, ever since my family switched to a gluten-free and low-carb lifestyle, I have been on a mission to create the perfect bread. Finally, I have a recipe I am truly proud of! This bread is made with flaxseed meal, which is incredibly rich in protein and easy to find at your local grocery store.
It is moist, soft, and completely gluten-free. The best part? One slice contains less than 1 gram of net carbs and packs 6.5 grams of protein! Plus, hands-on preparation takes only 15 minutes.
My husband and children absolutely love it. I bake a loaf every week, slice it up, and store it in the freezer. Whenever we need bread, I simply grab a slice, pop it in the toaster, and it is ready to go. It is excellent for toasting, making sandwiches, spreading with jam, or creating hot melts (which are Stony's absolute favorite!).
Here is the recipe so you can enjoy it at home.
Prep time: 15 minutes
Bake time: 60 minutes
Ingredients
- 2 cups flaxseed meal
- 5 egg whites (store-bought liquid egg whites work great)
- 2 whole eggs
- 6 tbsp coconut oil or olive oil
- 1 tbsp baking powder
- 1 tsp Himalayan salt
- 1/2 cup water
- 1/2 cup shredded sharp cheddar cheese
Optional: You can make this a plain loaf, or elevate the flavor by adding seasonings like rosemary, basil, oregano, garlic powder, or a topping of roasted seeds.
Instructions
- Preheat your oven to 350°F (175°C).
- Mix all the ingredients together in a large bowl until well combined.

This is what the dough looks like after mixing, right before baking:

- Pour the mixture into a bread baking pan.
- Bake for 50 to 60 minutes, or until cooked through.
The beautiful baked bread:

- Cool: Once baked, remove the bread from the pan, wrap it in a clean kitchen cloth, and place it on a wire rack to cool completely.
- Store: When the bread has cooled, slice it up. To freeze, separate the slices with small pieces of parchment paper and store them in a freezer-safe container or bag.
