Low-Carb Cheesy Spinach Puffs

I have been making this cheesy spinach recipe for a while now, and I absolutely love it! These puffs are quick to make, delicious, and contain less than one net carb each. They look fantastic, making it easy to create a beautiful, decorative dish. Plus, they serve as the perfect low-carb side dish or appetizer that lasts for days.

This recipe makes about 30 puffs. (Pro tip: I often double the batch to ensure I have a healthy side dish ready for the next few days!)

Ingredients

  • 16 oz package frozen spinach, drained
  • 1 cup almond flour
  • 4 Tbsp salted butter, melted or softened
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese (optional)
  • 1/2 cup of your favorite cheese (feta, sharp cheddar, mozzarella, etc.)
  • 1/4 tsp ground nutmeg
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 Tbsp onion powder
  • 3 Tbsp heavy whipping cream

Preparation

  1. Prep the mixture: Add all ingredients to a food processor or blender and puree until smooth. (Alternatively, you can mix everything thoroughly by hand.)
  2. Form the puffs: Roll the mixture into 1-inch balls and place them evenly on a baking sheet.
  3. Bake: Bake at 350°F (175°C) for 15 minutes. Be careful not to overbake, as they can dry out!
  4. Store: Keep any leftovers in an airtight container in the refrigerator for 3 to 4 days.

Serving Suggestions

Serve warm with a dollop of sour cream on top for a rich, creamy finish and a beautiful presentation. These puffs pair perfectly with any main course or meat dish. You can also enjoy them chilled alongside slices of ham or cheese for a quick dinner.
