Hungarian Flaxseed Apple Pie (Low-Carb & Gluten-Free)
This Hungarian flaxseed apple pie is incredibly rich and fresh! It is perfect as a follow-up to a warm, comforting soup or enjoyed on its own as a dessert with a hot cup of tea or coffee.
You can easily swap the apples for other fruits—pears, cherries, strawberries, or plums all work beautifully in this recipe. Best of all, this pie is low-carb, sugar-free, gluten-free, and lactose-free. It is very easy to make, and the results are guaranteed to delight!

Our family is originally from Hungary, though we relocated in 2010 due to our son's special medical needs. Hungarian cuisine has its own wonderful peculiarities, and there are certain traditional dishes and desserts that will always hold a special place in my heart. The Hungarian apple pie—or as we call it, "Almáspite"—is one of them. My mom used to bake it often when I was a child, and we absolutely loved it!
This winter, my goal was to perfect a low-carb, sugar-free version of this recipe so I could continue baking this traditional pie for my own children. This version is made primarily with flaxseed meal, which is currently my absolute favorite ingredient for healthy baking. I love experimenting with flaxseed flour because it is incredibly versatile and easy to work with.
When I made my first attempt, I was so surprised and delighted that I nearly cried at the first bite. All those nostalgic feelings, smells, and emotions came rushing back! Ingredients
For the Dough:
- 4 large eggs
- 1/2 cup coconut milk or almond milk
- 2.5 cups flaxseed flour (flaxseed meal)
- 1 cup almond flour (or your preferred low-carb flour)
- 2 tbsp coconut oil or butter, melted
- 1/4 cup low-carb sweetener (erythritol, stevia, or xylitol)
- 1 tsp baking soda
- A pinch of salt
For the Apple Filling:
- 8–10 apples
- 1 tbsp cinnamon
- Optional: 2 tbsp low-carb sweetener
Healthy Tip: You can add some raisins, cranberries, or a dash of allspice to the apple filling to make it even richer!
Step-by-Step Instructions
1. Preheat the oven: Heat your oven to 380°F (190°C).
2. Prepare the filling: Peel and cube the apples. Place them in a pot, mix with the cinnamon, and simmer over medium heat for 30 minutes until the apple cubes are moderately soft. (Optional: You can add 2 tablespoons of sweetener and a handful of raisins to the apples while they simmer.)

3. Mix the dough: While the apples are simmering, mix the wet ingredients together in a bowl. Gradually add the dry ingredients and incorporate them well until you achieve a soft, creamy dough consistency.

4. Create the base: Line a 9-inch cake or pie pan with parchment paper. Press half of the dough into the bottom of the pan in an even layer. (Tip: This is easiest to do with wet hands or the back of a wet spoon. For a richer flavor, you can sprinkle some ground walnuts or cashews over this bottom layer.)

5. Add the apples: Spread the softened apple cubes evenly over the bottom crust.

6. Add the top crust: Top the apples with the remaining half of the dough. Since the dough is creamy, it is best to spoon it over the apples in dollops and gently smooth it out to create an even top layer.

7. Add a design (Optional): If you are decorating your pie (like making a snowman face!), use a wet knife to score your design into the top crust before baking.
8. Bake: Bake at 380°F (190°C) for 35–40 minutes.

9. Cool and serve: Remove the pie from the oven and transfer it to a wire rack to cool. Once completely cool, decorate as desired! It will stay fresh for up to 6 days in the refrigerator.
