What You Need
- 1 box of fresh mushrooms
- 2 eggs
- Leftover cooked meat (e.g., roasted chicken or ham slices) – Optional, as this recipe is also perfect vegetarian!
- 1/2 onion (or substitute with onion powder)
- Fresh parsley (or substitute with dried parsley)
- 1/2 cup of cheese (your favorite variety)
- A pinch of black pepper
- A pinch of garlic powder
- 1/2 tsp of salt
Preparation
- Preheat your oven to 370°F.
- Prepare the mushrooms: Gently separate the caps from the stalks. Peel the skin from the mushroom caps to open the cups a bit more, creating extra room for the stuffing.

- Make the stuffing: Place the mushroom stalks into a food processor along with the onion, parsley, and leftover meat (if using). Mix the stuffing ingredients gently and for a short time so they remain chunky, then combine with the remaining ingredients.

- Stuff the mushrooms: Place the mushroom caps on a baking tray lined with parchment paper. Fill each cap generously with the stuffing mixture and top each with a sprinkle of grated cheese.

- Bake: Place the tray in the oven at 370°F for 15 to 20 minutes, or until the cheese is beautifully golden and bubbly.
