Ingredients
Wet Ingredients
- 1/2 cup coconut yogurt
- 1/4 cup coconut oil
- 1 egg
- 1/3 cup honey
- Vanilla extract, generously
Dry Ingredients
- 2 cups sorghum flour
- 1/3 cup tapioca starch
- A little stevia
- A pinch of salt
- Dark chocolate chips

Instructions
- Preheat your oven to 180°C.
- In a mixing bowl, add the coconut yogurt, coconut oil, egg, honey, and vanilla. Mix until smooth.
- Add the sorghum flour, tapioca starch, stevia, and salt.
- Mix gently until a cookie dough forms. Try not to overmix.
- Fold in the dark chocolate chips.
- Shape the dough into cookies and place them on a lined baking tray.
- Bake at 180°C until the cookies have beautiful golden-brown, crispy edges.
