The most healthy and quick gingerbread cookie in the World!

Easy. Quick. Simple.
I truly believe this is one of the healthiest gingerbread recipes in the world! :)
It won't add extra weight to a child on a special diet, nor will it cause the emotional sugar crashes associated with the heavy carbs found in traditional gingerbread recipes.
This recipe is:
- Low-carb
- Sugar-free
- Nut-free
- Lactose-free
- Gluten-free
Each medium-sized gingerbread cookie contains approximately 2 net carbs. Best of all, it requires only 10 minutes of hands-on preparation and cutting.
This is exactly what you need for a hectic holiday season!
Ingredients
- 2 cups ground flaxseed (brown or golden)
- 2 eggs
- 3–4 tbsp oil (canola, olive, or avocado)
- 1 tsp baking soda
- 1 cup sweetener (such as Erythritol or Stevia)
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
Tip: You can also add a splash of 100% pure maple syrup for enhanced flavor.
Preparation

Preheat your oven to 380°F.

Mix the ingredients in a bowl until you achieve a firm, playdough-like texture. If your dough is still sticky, add a little more ground flaxseed until it firms up. (Optional: You can add some brown rice flour to make the dough more manageable, but keep in mind this will add extra carbs. A half cup of brown rice flour adds approximately 1.4g of net carbs per cookie. Note: Using golden flaxseed flour often yields slightly better results than brown flaxseed flour. The photos below show the results using brown flaxseed flour.)

Prepare your surface. It is IMPORTANT to spread some coconut flour or gluten-free flour on your cutting board before placing your dough on top.

Roll out the dough. Place a second piece of parchment paper on top of the dough and roll it out to an even thickness.

Cut the shapes. Remove the parchment paper and cut out your gingerbread shapes. Be careful when lifting them to place on your baking sheet, as this dough can be slightly fragile.

Bake the gingerbread cookies for 10–15 minutes, or until the edges are nicely browned.

Cool. Let the cookies cool for 10 minutes before handling.
